Fish ‘N Beer Coming to RiNo This Fall - Chefs Kevin Morrison and Aniedra Nichols partner up

Chef Kevin Morrison, who burst onto the Denver food scene with his ever-popular Pinche Taqueria, has been slowly building a culinary empire over the past four years. With two taquerias already open, a third scheduled for later this year, and Poco Torteria now open in Avanti Food & Beverage, Morrison is planning a completely different concept: Fish ‘N Beer. His partner in this new venture is Chef Aniedra Nichols, currently the executive chef of Elway’s Cherry Creek.

Nichols, whose last day will be April 1 of this year, has been at Elway’s since 2007 and worked her way up to executive chef, taking over for Chef Tyler Wiard when he was promoted to culinary director for all four Elway’s locations.

“Looking back over the last nine years, I couldn’t have asked for a better mentor, friend, and partner than I found working alongside Tyler Wiard,” Nichols says. “I sincerely want to thank him for giving me places to showcase my culinary skills and for all of his support over my career.”

Fish ‘N Beer {3510 Larimer Street, Denver} is slated to open early this fall and will be a seafood-centric neighborhood restaurant. Morrison and Nichols—both of whom sit on the DO Chef Panel—will serve wood-fired and plancha-grilled dishes, complemented with 15 rotating craft beers, wines, and cocktails.

“This is just such an incredible opportunity,” says Nichols of the newly formed partnership. “I’m excited to be working with Kevin. A smaller, more intimate concept is definitely something that I’ve always wanted to return to and it’s a chance for me to really cook again.”

The 1,500-square-foot space, developed by Design Paramaters, will be both intimate and open enough for the kitchen staff to interact with the guests.

“I’m looking forward to being hands-on again, greeting guests when they come in and when they leave. That to me is exciting,” says Nichols. Morrison, for his part, is thrilled by the new partnership and the new concept: “I am extremely excited to partner with Aniedra and bring her unique talents to RiNo. She’s an incredible person and chef and I’m excited to see what this next chapter brings now that she has her own kitchen.”
